
Today I wanted to bake some berry muffins, so I did.
As I scanned through screeds and screeds of google results for 'berry muffin recipe' my search came to a stop as I stumbled upon a recipe by Allyson Gofton. It was actually a recipe for apricot and almond berry muffins but seeing as a have an incredible dislike for anything apricot flavoured, I rapidly removed the ingredient from the list. As for the almonds, we didn't have any...
Before commencing, I decided to double the recipe below, seeing the phrase 'makes 12 muffins' never sounds like very many..
Ingredients:
3 cups flour
2 tbsp baking powder
1/2 tsp salt
1/2 cup sugar
1 1/4 cups milk
2 eggs
1 tsp vanilla essence
100 grams butter, melted, cooled
1 1/2 cups blackberries (use any berries you otherwise prefer or that are available.)
Method:
1) Combine the flour, baking powder, salt and sugar into a large bowl and make a well in the centre.
2) Mix together the milk, eggs, and vanilla essence. Fold into the flour with the cooled melted butter and berries.
3) Spoon mixture into muffin tins.
4) Bake at 220°C for 15 minutes or so until well golden and cooked through (cooking time may depend on your oven so I recommend checking the muffins from time to time)

Its a simple but very delicious recipe that's quick and easy to make. These muffins keep well in an airtight container and can also be put in the freezer.
